Everything will only keep the sort when you are using a 'fast sort'.
Everything will revert to name sorting when the sort would be slow.

Please make sure fast sort is enabled for Date Modified:

• In Everything, from the Tools menu, click Options.
• Click the Index tab on the left.
• Check Index Date Modified.
• Check Fast Date Modified sort.

  If you are trying to sort by Date Created, please:
• check Index Date Created.
• Check Fast Date Created sort.
• Click OK.
